Summer Beet Salad with Citrus Vinaigrette

This summer beet salad is one of my all time favorite recipes.

A few months ago my friends and I took a cooking class where we learned how to make this amazing Summer Beet Salad with pickled and candied oranges, almonds and a to die for citrus vinaigrette. I have now made it at home several times and have adapted it a little more to the home kitchen but beware this does take a while to make due to all the steps and it makes enough to feed a large picnic. This is going to be your summer picnic potluck go to for sure! Step 1: Pickle and Candy the Orange Peels Ingredients: 3 whole oranges, sliced with peels left on 1 cup sugar 1/4 cup white wine vinegar 3 whole cloves 1/2 cinnamon stick 1/2 c water Directions: Place the orange slices in a pot and and cover with water (not the 1/2 c needed above). Bring to a boil over medium heat, then reduce to a simmer. Continue simmering for 1 hour. Strain the orange slices and return them to the pot. Add the remaining ingredients and stir to help dissolve the sugar. Bring to a gentle simmer. Continue simmering, stirring occasionally, for 1 hour. Remove from heat and let cool to room temperature. Separate the orange pulp from the rind and discard the pulp. Slice the rind into 1/8" think ...

When my friend Heather Meeks told me about her Gingerbread Men with Essential Oils I knew I had to get her to share. She is an amazing baker (did you see her Pumpkin Spice Muffins earlier this year?) and I just knew you all would love these. This is what she had to say: I got RAVE reviews from my gingerbread men! I didn't tell them my secret ingredient but I'm sharing with you guys! The 3 year olds in my class LOVED them! Even my super picky, won't eat anything but a hot dog, nephew! I'd say that was success! Heather adapted her gingerbread men recipe from Sally's Baking Addiction to use the Young Living Essential Oils (there is a great sale on them right now-follow the link) we both love so much. This white chocolate cherry almond bark is the perfect quick and easy recipe to for the holidays. It's rich and decadent, yet takes minutes to make. As you all know, that is exactly the type of recipe you will find on this blog. Things that make you look like a hero in a short amount of time! For this recipe I bought everything at my local big box chain except the orange oil. White Chocolate Cherry Almond Bark Ingredients 3 cups white chocolate melting wafers. I use Ghirardelli which is easy to find this time of year. I buy them in bulk and use them in my Peppermint Bark Snowflakes too. 3/4 cup chopped almonds 1/2 cup chopped dried tart cherries 6-8 drops Orange Essential Oil. (optional but really brings it to the next level) Directions for White Chocolate Cherry Almond Bark Melt white chocolate wafers in a double boiler or in a microwave safe bowl at 50% power for 3 mins stopping every minute to stir.
